PINTY’S CHICKEN BROCHETTES WITH PICKLES AND POTATOES

INGREDIENTS

  • 1 box Pinty’s Honey & Garlic Chicken Chunks
  • 15 +/- tiny red potatoes
  • 30 ml (2 tbsp.) olive oil
  • 15 ml (1 tbsp.) Tex-Mex seasoning
  • 30 slices +/- sliced hamburger pickles

PREPARATION

  • Preheat oven to 230°C (450°F).
  • Place chicken chunks on baking sheet lined with parchment paper. Bake following instructions on the package.
  • Meanwhile place potatoes in a pot. Cover with cold water and add salt. Bring to a boil and cook 18 to 20 minutes.
  • Drain potatoes and let cool slightly before cutting into halves.
  • Place potatoes in a bowl. Drizzle with oil and sprinkle with Tex-Mex seasoning. Toss.
  • In another bowl, toss the chicken chunks with the honey garlic sauce.
  • Using 8 skewers, make the brochettes alternating chicken, potato and pickles. Place brochettes on a baking sheet lined with parchment paper.
  • Bake 5 to 7 minutes.
  • Serve the brochettes with the hot sauce provided in the Pinty’s box.
