BBQ TAQUITOS

INGREDIENTS

  • 1 box Pinty’s Bold BBQ Chicken Wings
  • 750 ml (3 cups) Tex-Mex style grated cheese blend
  • 30 ml (2 tbsp.) chopped fresh cilantro
  • 1 small red pepper cut into small dice
  • 8 small tortillas
  • 3 green onions, minced
  • 1 lime, quartered

PREPARATION

  • Preheat oven to 230°C (450°F).
  • Place the chicken wings on a baking sheet lined with parchment paper. Bake following instructions on the package. Remove from oven and let cool before removing bones from chicken wings.
  • Debone the wings.
  • In a bowl, toss the chicken wing meat with half the cheese, the cilantro and the red pepper.
  • Divide the mixture between the tortillas. Roll up tucking in ends as you go.
  • On a baking sheet lined with parchment paper, place the taquitos with seam side down. Top with remaining cheese. Bake 6 to 8 minutes.
  • Remove from oven, garnish with green onion and serve with the Pinty’s creamy dill sauce provided in the box and lime quarters.

KANSAS CITY CHIEFS

26-year-old businessman Lamar Hunt formed the American Football League in 1959, which included the Dallas Texans team. In 1963, Hunt moved the team to Kansas City before agreeing to a merger with the NFL in 1970.

About The team

The Chiefs won three AFL championships, in 1962, 1966, and 1969, and were the second AFL team (after the New York Jets) to defeat an NFL team in an AFL–NFL World Championship Game. Most recently, they won Super Bowl LIV after defeating the San Fransisco 49ers in 2020, earning them their first championship in 50 years.

Quebec native and McGill graduate Laurent Duvernay-Tardif played offensive line on that Super Bowl winning team. The following season, he stepped away from the game to return to Montreal and use his medical degree to help in the fight against COVID-19.

Quarterback Patrick Mahomes is big reason why the Chiefs are popular among NFL fans across Canada, as his unorthodox style and ability to turn broken plays into touchdowns makes any Chiefs game exciting until the final whistle.

KANSAS CITY ?

Kansas City is split between the states of Missouri and Kansas with the Chiefs playing their home games at Arrowhead Stadium on the Missouri side.

Culturally, few have given more to the city than the late Ewing Marion Kauffman, a pharmaceutical entrepreneur, philanthropist and humanitarian. Among his major contributions are the Kauffman Foundation, which helps disadvantaged youth reach their full potential through education and the Kauffman Center for the Performing Arts, home to the Kansas City Symphony, the Lyric Opera of Kansas City, and the Kansas City Ballet.

He also founded the only other major professional sports team in Kansas City in 1969. The MLB’s Royals plays at Kauffman Stadium, named in his honour.
